OLYMPIA CAPITOL HOME COOKING

HOME COOKING- SLOW COOKING- a slow cooker is a great way to keep family appetites at bay when they arrive a few days early for the holidays.  With  our vacation rentals being only two blocks from the Capitol Downtown Core of boutiques and restaurants in Olympia, this should give you some time to enjoy our city.   Shop at Bayview Market downtown for good organic food or if you are lucky FArmer's Market may be open!   Throw all the goodies in the slow cooker crock pot and forget about it.   Start at 8 in the morning and then go out and shop for the holidays or have time to spend with the family.  Short Stay Lodgings is a great place for a slow cooker.  Of course they are in our fully equipped kitchens along with a dishwasher.  I  put them in the apartments for the holidays so my guests would have time to go shopping to all the great boutiques in downtown Olympia, only a short walk from our vacation apartments.  I recenty discovered a place called BREATH on the corner of Legion and Capitol Way which is kitty corner to STARBUCK's.  Very sweet folks and a cute and quiet place to ahve a bowl of soup or tea in the back room.  Drop -in Yoga Too!  So use the SLow COOKER & slow down and enjoy an old fashioned holiday in the State Capitol of Olympia.  A hearty Dinner will be ready when you get back to "Your Home Away from Home!"

This easy-to-prepare stew adds all ingredients to the slow cooker at one time, eliminating the step of browning the beef. Slow Cooker Tip: For best results, do not remove cover during cooking.
Ingredients

1 TSP ROSEMARY LEAVES

1 TSP DRY HOT MUSTARD

1 TSP GARLIC POWDER

OR HOME MADE BEEF STOCK

4 FRESH DICED TOMATOES WITH JUICE

SALT AND PEEPER TO TASTE

Directions

Place beef cubes, onion, carrot, crushed rosemary, garlic powder and bouillon cubes to slow cooker. Stir in tomatoes and wine. Add pickling spice bundle; cover.

Cook 8 hours on LOW or 4 hours on HIGH. Remove pickling spice bundle.

Thicken stew by mixing flour with 1 tablespoon water in medium bowl until smooth. Stir in several tablespoons hot liquid from stew, then stir flour mixture into stew. Cook and stir 2 to 3 minutes or until stew thickens slightly. To serve, place 1 slice bread in each bowl. Spoon stew over bread
